This is our flagship blend and the one we probably nerd out the most over during roasts and cuppings. There's something special about dialing in an espresso that is versatile and exhibits all the flavors we love about coffee. It's rich, silky with a prominent body, sweet, and with an acidity that shines on its own and cuts through milk.
Right now we're using two very complementary coffees. The Ethiopia is a washed Guji that has strong berry and red fruit notes with a bright but balanced acidity. Sweet lemon is present as well. The Guatemala is a washed coffee from the La Hermosa co-op in the Acatenango Valley. It's Organic and rich, very much a reflection of the minerality found in the soil in this region. The earthy, sweet complexity of this coffee provides a rounded balance to the Ethiopia. The berry and citrus aromatics in this blend really pop. We think you'll find the Phoenix rising on your list of favorite coffees.
